Three easy crockpot meals

You can have dinner on the table in minutes with a little advance planning.  If you start your crock pot in the morning, your meal will cook all day while you work, relax, or play with your kids.  These are my three easiest main dish recipes recipes; all three can be assembled in less than 5 minutes.  Pair with potatoes, rice, noodles, veggies, salad, or bread (as desired) for a complete meal!

Barbecued Chicken

Take a whole chicken and place in the crockpot.  Pour 1-2 cups of barbecue sauce over the bird and cook on low for 8-10 hours.  You can also use 3 pounds of cut chicken if that’s what you have on hand, but I find it easier to pull the meat off a whole chicken.

Pull the meat off the carcass and serve as you like.  The meat can be served atop rice, or accompanied by vegetables.  My kids also like it on rolls for hot barbecue chicken sandwiches.

Pot Roast

Place a 3 pound (approximately) chuck, top pound, or bottom round beef roast  in the crock pot. Top with 1 can of Campbell’s cream of mushroom soup and one can of Campbell’s cream of chicken soup.  Cook on low for 8-10 hours.

Slice and serve with noodles and steamed veggies, topped with the gravy that has made itself in the pot!  Your family will think you slaved for hours.

Cranberry Pork

Take one 2-3 boneless pork roast 9 or an equivalent number of boneless chops or cutlets) and top with a can of whole berry cranberry sauce.  Cook on low for 8-10 hours.  If you want to get fancy, you can dress the cranberry sauce up the way SaltandLemonade does here, but if you’re in a hurry, or the baby is crying, plain cranberry sauce works fine.

This is really yummy with mashed potatoes, but if you don’t want to bother with mashing, you can also serve with boiled potatoes and/or steamed veggies.
